Makin' banana pancakes, pretend like it's the weekend

It's no secret that I devote at least one day of the weekend to a decadent brunch. However, there's nothing like a fancy mid-week breakfast for a good pick me up. Remember when everyone was just making hella banana bread at the beginning of quarantine? Yeah, I got really tired of that so I decided to start experimenting with bananas and let me tell you...the options are endless.


One way they serve really well is in any vegan pancake or waffle! They add a natural sweetness, help bind the batter, and it's essentially another form of banana bread so who doesn't love that.


So, if you're in the mood to pretend like it's the weekend (in the words of Jack Johnson and me) grab just a few ingredients and whip up these delicious banana bread pancakes. Just a quick tip, the key to vegan pancakes is LOW & SLOW on medium heat. They don't always fluff and perk up like our normal ones but I promise they're just as good.


Another key ingredient that I love to throw in my breakfasts is a plant-based protein powder. It adds some texture to the flour! Now, on to our recipe!


Banana Bread Pancakes (Vegan, GF)

Serves 1





Ingredients:

  • 1/2 cup of oat flour

  • A little less than 1/2 cup of dairy-free milk

  • 1 tsp baking powder

  • 1/2 ripe banana (mashed)

  • Cinnamon

  • 1/2 or 1 tbsp of liquid sweetener (maple syrup, honey, agave, or I used this date syrup)

  • 1 tbsp of vanilla plant-based protein


Method:

  • Add all your ingredients to a bowl and mix till well combined. Let the batter rest for about 2 minutes and then preheat a pan with some coconut oil or vegan butter

  • Form your pancakes into little circles to cook on medium heat, flip when bubbles form and cook the other side till golden

  • I topped mine with coconut yogurt, nut butter, more banana, blueberries, bee pollen, and maple syrup. You can add whatever toppings you'd like, enjoy :)
