single serving desserts aka the best way to treat yourself

I make dessert literally...every night. Honestly there's 2 things I look forward to a lot in the day: what I'm going to eat for breakfast & what I'm going to make for dessert (lol). The foodie in me really takes over sometimes.


But actually, when I was in constantly in a more *obsessed* state of what I was eating, I thought dessert every night was way too much. Diet culture and other toxic societal standards can easily convince people that too many sweets are bad for you and you'll never reach your goals if you eat "too much sugar."


I just wanted to write this short post to say...f*** it! Treat yourself! Whenever you want! If dessert makes you happy and you have an insane sweet tooth like me, eat it every night! Doing what makes YOU happy is always the most important rule to live by.


So, my every night dessert cravings led me to discover single serving desserts. They usually take 10 minutes or less to make, are delicious, and you can switch it up every night. This post features a single serve chocolate chip cookie (vegan and gluten-free for all my homies <3).


Single Serve Chocolate Chip Cookie (vegan, gf)





Ingredients:

  • 4 tablespoons of oat flour

  • 1 tablespoon almond butter

  • 1 tablespoon maple syrup

  • 1 tablespoon coconut oil or vegan butter (melted)

  • 1 teaspoon vanilla extract

  • 1/4 teaspoon of baking soda

  • Dairy-free chocolate chips (as many as you'd like, does anyone actually ever measure this? I use the brand Lily's)


Method:

  • Mix together all your ingredients and fold in the chocolate chips last

  • Roll into a ball and flatten on to a baking sheet lined with parchment paper

  • Bake at 350 degrees for ~10 minutes and then let cool for 5

  • Top with any dairy-free ice cream of your choice! I used Nubocha vanilla gelato
