Upgrade your avocado toast

To start, I think my generation has made avocado toast its own little special meme. I mean, I can't argue with the fact that it does seem silly to pay $8 - $10 dollars for some avocado on bread when you're out, BUT I will never stop supporting buying a fancy avocado toast. There's just something about the presentation, the different combinations, it's exciting every time.

Honestly, long gone are the days of just bread and mushy avocado, when I first became plant-based I started making so many different toast variations because it's easy and such a fun way to add some diversity in your diet! I eat a different variation of avocado toast weekly and this one is my latest obsession. It has a kind of caprese vibe to it, nice and refreshing but still packed with flavor.

Before I share the recipe, I want to add in some essentials that I love for my toast. I absolutely love Simple Kneads bread which can be found at Whole Foods or Weaver Street Market. It is made locally and has the BEST ingredients for any gluten-free bread I've ever tried!

My second product is my one and only, nutritional yeast or "nooch" as some call it. A nutritious seasoning that adds a lightly cheesy flavor to your savory foods, is packed with vitamin B12, and is just all around great for so many different dishes.

Okay, now on to the recipe! It may be simple, but adding new and fresh ingredients makes all the difference with toast.

Caprese-ish Vegan Avocado Toast

(serves 1)


  • 2 pieces of sourdough (I used the Simple Kneads one)

  • Vegan ricotta (I love mine from Kite Hill foods)

  • 1/2 a ripe avocado

  • Cherry tomatoes

  • Cucumber

  • Balsamic glaze

  • Microgreens

  • Seasonings: salt, pepper, & nutritional yeast

Method (I know this is mostly self explanatory just want to add a few tips):

  • Start by toasting your bread, *pro tip* if it's gluten-free bread toast it twice so it still gets that good crunch! Spread on your vegan ricotta and mashed avocado along with seasonings to taste

  • If you're feeling fancy, slice your tomatoes and add to a pan with some salt, pepper & garlic powder till they're just slightly blistered (but this is optional)

  • Add on your thinly sliced cucumber, microgreens (bc hello plant diversity), some more seasoning if you'd like, and finish with the beautiful balsamic glaze!
